Quack, Quack

For the last week or so, Little Man has been making a new noise. Last night, James finally figured out that he is quacking. We're not sure exactly how he learned this. One of the apartments that we looked at last week had ducks in the back yard and he loved them! (Sadly for him, that is not the place we picked.) But we also visited my sister last week and she has a quacking duck stuffed animal/puppet thingy, which he also loved. Now whenever he sees a duck, he starts quacking. It is adorable.

I might say it but...

Several times a day at our house, James and I can be heard saying "I am going to beat that child!" Of course, we never actually would. It just something we say to express our extreme frustration with whatever mischief Little Man is causing at the moment. Do you still believe me after seeing this?





I'm not really sure how he got this monster bruise. It sure looks like it hurts.

In other news, we found a place to live! Three bedrooms, new carpet, a fabulous kitchen, a nice washer and dryer, a two car garage, and a yard with a garden spot! We can't wait. The countdown has begun!

Miracle

I've tried to write this post a few time now, but there is just no way to adequately described the perfection of the miracle we have experienced. I went to Logan to interview for their chemistry/biology teaching position they have for next year and on Thursday they called and offered me the job. Everything has worked out so perfectly for us. We know we are so blessed. And I am so excited about this new job. I'll be teaching Biology, which will be a challenge, but I'm so excited about the wonderful people I'll get to work with. Now we've just got to find a place to live...

New Habits

Little Man has picked up some cute (and some not-so-cute) habits lately. The not-so-cute habit is that he has become a VERY picky eater. He won't eat anything but cereal, yogurt, fruit, and Gerber Lasagna. No veggies, no bread or crackers, nothing with any texture; he won't even eat cookies or graham crackers. It seems like he's regressing. He used to eat things that required chewing, but not anymore. So imagine our surprise when we saw this yesterday:



In case you can't tell, that's dirt all over his face. He ate a big handful out of a plant and he liked it! He doesn't like cookies, but he likes dirt. What kind of weird kid did we get?

He has also become a climber this week. Today, he climbed up on to our bed all by himself. I'm not even really sure how he managed that. His favorite thing to climb on, though, is the shelf that is supposed to store his toys. He pulls the baskets of toys off, climbs up on the shelf, scoots himself around so that he's facing forward, then sits there and reads a book. It's pretty cute, even if it means a big mess.

Happiness and Tacos

So if you are a very avid reader of my blog, you might notice that my most recent post got deleted quickly after I posted it. James told me he "didn't want everyone knowing our business," or some crap like that. Oh, brother. What are blogs for then? In case you missed it, the gist was that we're hopefully moving to Logan at the end of the month. For those of you that did catch it, that's still all we know. I will be sure to keep you all updated.

It has been a (mostly) happy few weeks. (It is, however, possible that I've blocked out all the really bad stuff, because it does seem like it's been a fairly stressful happy week, although I can't recall why exactly.) We've spent lots of time with James's family (all of whom I am going to miss dearly when we move) (Does anyone else think I'm using to many parentheticals?), seen three very sweet kids get baptized, Little Man had his fourth tooth break through (We were all glad when it finally broke through; this was the hardest tooth yet and I think he's already working on his next one.), and I think most of my AP Chem kids are going to pass their big exam next week. In one week from now, school will slow down quite a bit, and soon after that, we should know more details about where we'll be working and living in Logan. I can't wait.

And finally, since my punk little sister tagged me on her blog, here's a favorite recipe of ours. (Who am I kidding; I check them all everyday anyway. I'm a little OCD about it.)

Navajo Tacos

Fry Bread:
2 c flour
1 T baking poweder
1 t salt
1 c milk
oil for frying

Beans:
2 can beans, drained and rinsed (I usually use 1 can of kidney and 1 can of black)
1 can diced tomatoes
1 palmful of chili powder (how's that for accuracy?)
1/2 t each oregeno, cumin, garlic powder (I don't really measure, though. Just through some in until it looks good.)

Toppings:
shredded cheese
lettuce
salsa
sour cream
other normal taco fixins'

1. Stir together dry ingredients for fry bread. Stir in milk and mix until dough comes together. (Add more flour if necessary.) Knead for five minutes, then let rest for five minutes.
2. Meanwhile, combine ingredients for beans in a saucepan, cover and let simmer for... as long as it takes you to get everything else ready.
3. Heat about 1/2 inch of oil in a heavy skillet until... gosh, do you really think I use a thermometer? Just heat it up till some water flicked in it sizzles. Break off a hunk of dough, shape into a relatively round, flat piece, then fry in hot oil, turning once. Drain on paper towels.
4. Top fry bread with a scoop of beans and whatever fixins' you like. Yummy!
